It’s Dinner Time…… Again! Making my famous enchiladas

Does your family have a favorite meal? Does it always seem to be the one that takes the most effort? My family loves my enchiladas. I learned to make them over 20 years ago when I lived in West Liberty Iowa. I was pregnant with our first child, and a really good friend shared how she made hers. I tweaked it to use the ingredients my family likes. They can be some of the pickiest eaters!

Fry the corn shell for a few seconds on each side.

I love cooking for my family. My car accident made that very difficult for me. The first time I tried to cut a pizza and the pizza cutter fell out of my hand I just cried. I didn’t understand how much my life would be changed by that. It affected everything I do. Cooking dinner for my family has been the most difficult. I can’t cut up chicken. I burn myself or drop things because my hands don’t work the way they used to. SO making this meal is a difficult one for me….

After frying the tortilla a little on each side, I dab off excess oil with a paper towel. Then add some cheese and beef. Again, love my Pampered Chef measuring cups. Because my family enjoys these so much I put them in my Pampered Chef baking sheet. I can fit about 30 on it.

I hate blogs that go on forever and I have to keep scrolling to find the recipe….. So here it is!

Kim’s Enchiladas

  • 3# of ground beef
  • Shredded Cheese
  • Large can of Old El Paso enchilada sauce
  • Small can Cream of Chicken Soup
  • 3 dozen corn tortillas
  • Corn oil

Brown hamburger meat. Season with chili powder, cumin or whatever you like to add to your taco meat. Pour oil into small frying pan on low heat. When bubbles start to form, place tortilla in oil and cook on both sides. Remove to paper towel and dab excess oil. add cheese and taco meat, roll up and place seam side down on baking sheet. Repeat until pan is full. Mix enchilada sauce and soup together. Pour over top of enchiladas. Sprinkle some cheese on top. Bake in oven at 350 degrees for 25 minutes or until cheese is melted. Enjoy!
